Sayur Lodeh - Lontong Ingredients: Turnip Carrot Long beans Cabbage Beancurd 2 lemongrass 3cm lengkuas 1 tsp tumeric powder 400 ml coconut cream Salt & sugar to taste 1 tsp chicken granules Optional Ingredients: grind 1 tsp coriander seeds 1/2 tsp fennel seeds 1/2 tsp cumin seeds Blended ingredients: 3 red chillies or 10 dried chillies 4 chillie padi 4 shallots 3 garlic 3 candlenuts 1 tbsp dried shrimp 1 tbsp ikan bilis or dried anchovies 1 tsp belacan _____________________________________________ Sayur Lodeh - Lontong Bahan-bahan: Sengkuang Lobak merah Kacang panjang Kobis Tauhu 2 batang serai 3cm lengkuas 1 sudu teh serbuk kunyit 400 ml santan kelapa Garam & gula secukup rasa 1 sdk serbuk pati ayam (optional) Bahan-bahan: Kisar 3 cili merah atau 10 cili kering 4 cili padi 4 biji bawang merah 3 biji bawang putih 3 biji buah keras 1 sudu besar udang kering 1 sudu besar ikan bilis 1 sudu kecil belacan serbuk Optional: 1 sdk ketumbar biji 1/2 sdk jintan manis 1/2 sdk jintan putih

NASI AYAM (CHICKEN RICE) AND BUBUR KACANG HIJAU (GREEN BEAN PORRIDGE)

         








Roasted Chicken Rice Chicken stock: Ingredients: Chicken / Chicken wing / Chicken feet 1 Sup Bunjut 2 chicken cubes 1 onion 6 cm sliced ginger Salt to taste (1 & 3/4 tbsp ) Chicken marinate sauce: 2 tbsp oyster sauce 2 tbsp light soya sauce 3 tbsp fish sauce 1 tbsp sweet soy sauce / dark soy sauce Sugar to taste / 3 tbsp golden syrup 2 tbsp sesame oil Chicken, ginger & garlic oil: Chicken fat / Chicken skin 5 shallot / 1 onion 3 cm ginger 3 garlic 1/4 cup oil Chicken Rice Chillie Sauce Blend Ingredients: 10 red chillies 2 cups chicken stock 6 garlic 3 tbsp vinegar Salt & sugar to taste Chicken Rice Ingredients: 5 cups rice 1 cup basmati rice 1/4 cup chicken oil 1 1/2 tbsp margarine / butter Chicken stock 1 lemongrass 2 - 3 pandan leaves 1 cinnamon stick 2 star anise 3 cloves Enough chicken stock Salt to taste Sweet chillie sauce (1) Ingredients: blend 10 red chillies 4 chillie padi 6 garlic 1 - 2 cups chicken soup Sugar to taste 3 tbsp vinegar Sweet chillie sauce (2) Ingredients: blend 10 red chillies 4 chillie padi 6 garlic 1 cup warm water Sugar to taste 3 tbsp vinegar 1 tsp light soya sauce (adjust) Coriander leaves (chopped) Nasi Ayam Panggang / Nasi Ayam Goreng Stok ayam: Ayam / Kepak ayam / Kaki ayam 2 stok kuib ayam 1 Sup Bunjut 1 biji bawang besar 6 cm halia Garam secukup rasa / (1 & 3/4 sudu besar) Secukup air Sos perapan Ayam 2 sudu besar sos tiram 2 sudu besar kicap cair 3 sudu besar sos ikan 1 sudu besar kicap manis / kicap pekat 2 - 3 sudu besar gula / 3 sudu besar golden syrup 1 - 2 sudu besar minyak bijan Ayam boleh di goreng atau bakar di dalam oven Sos Cili Nasi Ayam (1) 5 biji cili merah 4 biji bawang putih 2 sudu besar cuka 2 cawan stok ayam Garam & gula secukup rasa Sos Cili Nasi Ayam (2) Ingredients: blend 10 lada merah 4 cili padi 6 bawang putih 1 Cavan air Garam & gula secukup rasa 2 tbsp cuka 2 sdk kicap cair Daun ketumbur (dicincang) Minyak ayam: Masak minyak ayam selama 10 minit dan tapis Kulit & lemak ayam 5 biji bawang kecil / 1 biji bawang besar 3 biji bawang putih 3cm halia 1/4 cawan minyak Nasi Ayam 5 cawan beras 1 cawan beras basmati 4 sudu besar minyak ayam 1 sudu besar marjerin / mentega 1 batang kayu manis 1 bunga lawang (optional) 2 bunga cengkih (optional) 2 - 3 daun pandan Stok ayam secukupnya Sup ayam: Stok ayam Daun saderi Daun bawang Bawang goreng Lada putih (merica) Daun ketumbar

NASI LEMAK / SAMBAL TUMIS IKAN BILIS / SAMBAL BAWANG





 





Nasi Lemak
Ingredients:
4 - 6 cups rice 500g Coconut milk (Heng Guan) or 300 ml Kara Coconut cream 3 pandan leaves 3 shallots 2 garlic 4cm ginger 1 lemongrass 
Salt to taste
Fried chicken wings / Mid wings Ingredients: marinate Chicken wings / drumets / mid wings 1/2 tbsp tumeric 1 tsp white pepper 1 tsp chillie powder 1 tbsp sugar 1 tbsp chicken powder Paste (blend) 1 onion / 5 shallots 3 garlic 3 cm ginger 1 tsp coriander seeds 1 tsp white peppercorns 4 lemongrass
Sambal Tumis Ikan Bilis
Ingredients: 2 cups chilli paste 2 onions / 20 shallots 6 cloves garlic 4 cm ginger 1/2 tsp belacan 1 tsp tumeric 1 ikan bilis cube or 1 tsp chicken granules 2 tbsp palm sugar 1 tbsp sugar Salt to taste 1/2 tsp tamarind paste
(Note : Fry sliced onions before adding chillie & onion paste) Sambal Tumis Bawang / Onion Sambal Ingredients: 2 cups chilli paste 6 cloves garlic & 4cm ginger (blend) 5 sliced onions 2 tsp belacan 1 tsp tumeric powder 1 tsp seasoning 1 tbsp palm sugar Salt & sugar to taste 1/2 tsp tamarind paste

Sambal Tumis Telur 

Ingredients:
Eggs 2 cups chilli paste 1 tbsp Ikan bilis 2 onion / 20 shallots 5 garlic 4 cm ginger 1/2 tbsp belacan 1 tbsp ikan bilis 1 tsp tumeric powder 1 tbsp palm sugar Salt & sugar to taste 1 tbsp chicken granules or 1 ikan bilis cube / seasoning 1/2 tsp tamarind paste
(Note : Fry sliced onions before adding chillie & onion paste)
