NASI LEMAK / SAMBAL TUMIS IKAN BILIS / SAMBAL BAWANG





 





Nasi Lemak
Ingredients:
4 - 6 cups rice 500g Coconut milk (Heng Guan) or 300 ml Kara Coconut cream 3 pandan leaves 3 shallots 2 garlic 4cm ginger 1 lemongrass 
Salt to taste
Fried chicken wings / Mid wings Ingredients: marinate Chicken wings / drumets / mid wings 1/2 tbsp tumeric 1 tsp white pepper 1 tsp chillie powder 1 tbsp sugar 1 tbsp chicken powder Paste (blend) 1 onion / 5 shallots 3 garlic 3 cm ginger 1 tsp coriander seeds 1 tsp white peppercorns 4 lemongrass
Sambal Tumis Ikan Bilis
Ingredients: 2 cups chilli paste 2 onions / 20 shallots 6 cloves garlic 4 cm ginger 1/2 tsp belacan 1 tsp tumeric 1 ikan bilis cube or 1 tsp chicken granules 2 tbsp palm sugar 1 tbsp sugar Salt to taste 1/2 tsp tamarind paste
(Note : Fry sliced onions before adding chillie & onion paste) Sambal Tumis Bawang / Onion Sambal Ingredients: 2 cups chilli paste 6 cloves garlic & 4cm ginger (blend) 5 sliced onions 2 tsp belacan 1 tsp tumeric powder 1 tsp seasoning 1 tbsp palm sugar Salt & sugar to taste 1/2 tsp tamarind paste

SAMBAL TUMIS TELUR / EGG SAMBAL

       






Sambal Tumis Telur 

Ingredients:
Eggs 2 cups chilli paste 1 tbsp Ikan bilis 2 onion / 20 shallots 5 garlic 4 cm ginger 1/2 tbsp belacan 1 tbsp ikan bilis 1 tsp tumeric powder 1 tbsp palm sugar Salt & sugar to taste 1 tbsp chicken granules or 1 ikan bilis cube / seasoning 1/2 tsp tamarind paste

MARBLE CAKE

Marble Cake

Recipe



Method 1


Ingredients
5 eggs  
250g Anchor Butter / Planta Margarine
230g icing sugar or 170g castor sugar
2 tsp vanilla essence
150 ml condensed milk
3/4 tbsp sponge cake emulsifier (ovalette)
1/4 tsp salt (optional)

Dry ingredients: Sift
240g self raising flour
1 tsp double acting baking powder
2 tbsp skimmed milk / ice cream strawberry milk powder

Pre-heat oven @ 160ºC 


Steps:

Sift flour, skimmed milk and double acting baking powder

Grease 8" x 8" x 3" the base and sides of baking pan &  line with greaseproof paper (Do not grease on paper)

Cream butter and icing sugar until light and fluffy

Add eggs one at a time , vanilla essence, condensed milk, sponge cake emulsifier (ovalette) and salt (optional)

Gradually add the flour and mix on low speed until combined

Pour 1/3 plain batter and mix with ( cocoa powder + warm water ) / chocolate emulco / Nutella or other colouring

Pour batter into baking pan and use chopstick or knife to swirl the mixture

Bake @ 170º - 180 º C oven mode (top & bottom heat) for 50 mins









Marble Cake

Method 2

Ingredients
5 eggs yolks 
5 egg white
250g Anchor Butter (melted)
230g icing sugar
2 tsp vanilla essence
150 ml condensed milk
3/4 tbsp sponge cake emulsifier (ovalette)
1/4 tsp salt (optional)

Dry ingredients: Sift
240g self raising flour
1 tsp double acting baking powder
2 tbsp skimmed milk / ice cream strawberry milk powder

Pre-heat oven @ 160ºC 


Steps:

Whip 5 egg whites until stiff,  gradually add icing sugar 

Add egg yolks one at a time,  condensed milk,  2 tsp vanilla essence, 3/4 tbsp sponge cake emulsifier (ovalette)

Pour melted butter and add dry ingredients

Bake @  170ºC - 180ºC oven mode (top & bottom heat) for 50 mins

Red / Green colouring
Chocolate Emulco
Strawberry Emulco
Optional:
2 tbsp Cocoa powder + 2 tbsp warm water (Van Houten)
2 tbsp Nutella

Ayam Masak Kicap / Sweet Soy Chicken Ingredients: Chicken - marinate with salt & tumeric 1/4 cup sweet Soy sauce 2 tbsp vinegar 1/2 tbsp sugar 1 - 2 cups water 2 red chillies 2 green chillies 1 onion 3 garlic 4cm ginger 1 Cinnamon 1 Star anise 2 Cardamom 2 Cloves Ayam Masak Kicap I Bahan-bahan: Ayam - (perap dengan garam & kunyit. Goreng ayam separuh masak) 1/4 cawan kicap manis 2 sudu besar cuka 1/2 sudu besar gula 1 - 2 cawan air 2 biji cili merah 2 biji cili hijau 1 biji bawang 3 biji bawang putih 4 cm halia 1 Kayu manis 1 bunga lawang 2 buah pelaga 2 bunga cengkeh Sweet Soy Chicken / Ayam Masak Kicap II Ingredients: Chilli paste : (boil for 5 mins & blend) 20 red chillies 10 chillies padi 4 round garlic 1/4 tsp salt Ingredients: Chicken - marinate with salt & tumeric 3 onion, 3 garlic 5cm ginger - slice 2 tbsp chillies paste 1 tbsp oyster sauce 1/4 cup sweet Soy sauce 2 tbsp vinegar 1/2 tbsp sugar 1 cup water Method 3 Sweet Soy Chicken Curry Leaves III Ingredients: Chicken - marinate with salt, oyster sauce, light soya sauce & sesame oil Curry leaves 2 tbsp chilli paste 1 tbsp oyster sauce 1/4 cup sweet Soy sauce 1/2 tbsp sugar 1 cup water
