MEE SIAM WITH GRAVY & JEMPUT JEMPUT PISANG


MEE SIAM KUAH




Mee Siam Kuah
Ingredients: Rice Vermicelli noodles Beansprouts Chives Eggs Beancurd Sambal Paste Blended Ingredients 20 - 30 dried chillies 3 onions or 20 shallots 6 - 8 garlic 1 -2 tbsp dried shrimp 1/2 tbsp belacan 1 tsp turmeric powder 2 tbsp fermented beans or taucho
1 - 2 tbsp tamarind Salt and sugar to taste Prawn stock Ingredients: 1 cup prawns (heads and shells) 1 tbsp large dried anchovies Fry prawn heads & shells with a some oil for 1 min and add water to boil. Clean large dried anchovies, remove heads, intestines, soak for 5 mins and rinse. Add anchovies to the prawn stock, continue to boil for 5 mins and set aside to cool.

MEE REBUS Ingredients: Beef / Mutton Yellow Noodle Beansprouts Green Chillies Fried shallots Fried beancurd Lime Celery Boiled eggs Sweet soya sauce
Sweet potatoes 2 lemongrass 3 tbsp curry powder 1 cup red sugar or dark brown sugar Sugar to taste Salt to taste 1 - 2 tsp tamarind paste (adjust to taste) 1/2 cup peanuts 1 - 2 tbsp plain flour (mix with water to thicken the gravy) Ingredients: blend 1 cup tiny dried shrimps 1/2 cup ikan bilis (anchovies) 1/2 cup taucho (salted soya beans) 3 onions 12 garlic 30 dried chillies 6cm ginger 5cm lengkuas 1/2 tsp belacan
