Mee Siam Kuah
Ingredients:
Rice Vermicelli noodles
Beansprouts
Chives
Eggs
Beancurd
Sambal Paste
Blended Ingredients
20 - 30 dried chillies
3 onions or 20 shallots
6 - 8 garlic
1 -2 tbsp dried shrimp
1/2 tbsp belacan
1 tsp turmeric powder
2 tbsp fermented beans or taucho
1 - 2 tbsp tamarind
Salt and sugar to taste
Prawn stock
Ingredients:
1 cup prawns (heads and shells)
1 tbsp large dried anchovies
Fry prawn heads & shells with a some oil for 1 min and add water to boil. Clean large dried anchovies, remove heads, intestines, soak for 5 mins and rinse. Add anchovies to the prawn stock, continue to boil for 5 mins and set aside to cool.
