Ingredients: Chicken 4 lemongrass 20 shallots 10 garlic 6 cm ginger 4 cm galangal 6 candlenuts 4 cm tumeric or 1 tbsp turmeric powder
5 tbsp cornflour
3 tbsp rice flour
1/2 tsp baking powder
Spices: 3 tbsp coriander seeds 1 tbsp fennel seeds 1 tbsp cumin seeds 1 tbsp white peppercorns

SAMBAL AYAM PENYET Method 1 Ingredients: 3 tbsp ikan bilis (anchovies) 5 tbsp shrimp paste (belacan) 10 red chillies 10 chillie padi 2 tomatoes 15 shallots 6 garlic 3 tbsp red sugar Sugar Lime juice Method 2 Sambal Balado Ingredients: 10 red chillies 30 red chillie padi 30 green chillie padi 2 onions / 20 shallots 10 garlic 6 tbsp cooking oil 3 - 4 tbsp belacan 2 tomatoes 1 tbsp chicken granules 1 tbsp gula melaka Salt & sugar to taste Lime juice
